    AI-Generated Food Imagery Found to Whet Appetites More Than Real Photos

    When it comes to tantalizing the taste buds with imagery alone, AI appears to be outperforming reality. In a revelatory study, consumers were found to show a marked preference for AI-generated food images compared to photographs of real dishes, particularly when the origin of these images was unknown.

    The study, detailed in the journal Food Quality and Preference, has stirred the pot by revealing how AI can manipulate key visual factors such as symmetry, shape, glossiness, and the interplay of light and color to make food appear more attractive. As explained by lead author Giovanbattista Califano from the University of Naples Federico II, even the positioning of food items is tweaked by AI to avoid creating a sense of threat or confrontation that might arise from objects pointing towards viewers, like a protruding carrot.

    The researchers tested the appetizing allure of these images on 297 participants. When the participants were unaware of the creative process behind the images, the AI-generated versions were consistently rated as more appetizing. However, when they were informed about the origin of the images, the appeal leveled between real and AI-generated food photos.

    Professor Charles Spence, a co-author from the University of Oxford’s Department of Experimental Psychology, highlighted a catch-22 situation. While AI offers a cost-effective boon for marketers, potentially cutting the expenses of food photoshoots, it also risks intensifying “visual hunger”—where viewing images of food can trigger appetite and cravings. This phenomenon could inadvertently drive unhealthy eating habits and foster unrealistic expectations about food among consumers.

    Another finding from the study was that AI-generated images often make foods appear more energy-dense, sometimes by exaggerating portion sizes. This manipulation could potentially tap into our evolutionary predisposition to seek out calorie-rich foods, leading to cue-induced eating of unhealthy foods.

    The study has ignited concerns beyond the health implications. With the globe inching toward more sustainable consumption patterns and embracing ‘ugly’ fruits and vegetables, the consistency of AI in producing idealized food images may set an unrealistic standard for the appearance of natural foods, hindering sustainability efforts.
